Unlike other sake types, Sho Chiku Bai Organic Nama is micro-filtered rather than being pasteurized by heat. While high temperatures can change the subtle flavors of sake, the micro-filtration process retains the original nama (young and fresh) flavors. It is rich and savory with comforting aromas and is brewed in Berkeley with premium organic Calrose rice polished to 60%. This junmai sake is one of the best food pairing sake along with Sho Chiku Bai Classic Junmai.
