Summer Berries with Citrus Infused Mirin

It is hard to go wrong with a beautiful, colorful fruit salad. How does one elevate this to a spoonful of wonder? The addition of Mirin with fresh squeezed citrus brings together the acids and sweetness of the fruits that will always surprise and delight.

Takara Mirin 1/4 cup
fresh squeezed orange juice 1 tablespoon
fresh squeezed lime juice 1 tablespoon
sea salt pinch
pal sugar pinch
raspberries 1 pint
blackberries 1 pint
strawberries, hulled and halved or quartered 1 pint
ripe plums, cut into /14 inch slices 2 to 3
torn mint leaves 1/2 cup


In a small saucepan over medium heat, reduce Mirin until syrupy and about 2 tablespoons remain.
Remove from heat and whisk in orange juice, lime juice, sea salt and palm sugar.
Pour Citrus Mirin syrup into a large lass bowl.
Add fruit and toss together gently. Cover bowl with plastic wrap and chill in the refrigerator for 20 minutes. NOTE: the longer fruit sits in the dressing the more intense the flavors will become.
Just before serving, tear mint into small pieces and toss through fruit salad.
