It is hard to go wrong with a beautiful, colorful fruit salad. How does one elevate this to a spoonful of wonder? The addition of Mirin with fresh squeezed citrus brings together the acids and sweetness of the fruits that will always surprise and delight.

Ingredients
Takara Mirin | 1/4 cup |
fresh squeezed orange juice | 1 tablespoon |
fresh squeezed lime juice | 1 tablespoon |
sea salt | pinch |
pal sugar | pinch |
raspberries | 1 pint |
blackberries | 1 pint |
strawberries, hulled and halved or quartered | 1 pint |
ripe plums, cut into /14 inch slices | 2 to 3 |
torn mint leaves | 1/2 cup |
Directions
In a small saucepan over medium heat, reduce Mirin until syrupy and about 2 tablespoons remain. |
Remove from heat and whisk in orange juice, lime juice, sea salt and palm sugar. |
Pour Citrus Mirin syrup into a large lass bowl. |
Add fruit and toss together gently. Cover bowl with plastic wrap and chill in the refrigerator for 20 minutes. NOTE: the longer fruit sits in the dressing the more intense the flavors will become. |
Just before serving, tear mint into small pieces and toss through fruit salad. |
