The centerpiece of our October Collection, MU|WA Junmai Daiginjo is crafted in Berkeley with 100% California-grown Yamadanishiki rice and fermented with red wine yeast.
It is pressed using the meticulous Funashibori method, a limited-yield technique that allows the sake to separate naturally from the moromi with minimal pressure. Silky and gently complex, MU|WA offers elegant notes of red fruit, citrus, florals, cocoa, and spice, lifted by bright acidity.
