Summer Berries with Citrus Infused Mirin

Takara Mirin1/4 cup
fresh squeezed orange juice1 tablespoon
fresh squeezed lime juice1 tablespoon
sea saltpinch
pal sugarpinch
raspberries1 pint
blackberries1 pint
strawberries, hulled and halved or quartered1 pint
ripe plums, cut into /14 inch slices2 to 3
torn mint leaves1/2 cup

Directions

  1. In a small saucepan over medium heat, reduce Mirin until syrupy and about 2 tablespoons remain.

  2. Remove from heat and whisk in orange juice, lime juice, sea salt and palm sugar.

  3. Pour Citrus Mirin syrup into a large lass bowl.

  4. Add fruit and toss together gently. Cover bowl with plastic wrap and chill in the refrigerator for 20 minutes. NOTE: the longer fruit sits in the dressing the more intense the flavors will become.

  5. Just before serving, tear mint into small pieces and toss through fruit salad.
