MIO Sparkling Sake 3 oz
Lightly Aged Belizean Rum 1.5 oz
Fresh Lemon Juice 0.5 oz
Rich Simple Syrup 0.25 oz
Yuzu Juice 0.25 oz
Shiso Leaves 3
Pear Slices 3


Add shiso and pear into a shaking tin and muddle. Add the rest of the ingredients except sake, add ice, then shake. Fine strain over ice into a collins glass and top with sparkling sake. Garnish with an edible snapdragon and a thin slice of pear.
