Cranberry Sauce

Fresh Cranberries 12 oz.
Pure Maple Syrup 3/4 cup
Takara Mirin 1/4 cup
Orange Juice or Mixture of Cranberry, Lemon, Apple juice, etc. 1 cup
Orange Zest 2 tablespoons
Lemon Zest 1 tablespoon
Raisins and/or Mixed Currants 1 cup
Cinnamon, Nutmeg, All Spice To taste
Roughly Chopped Pecans *Optional 1/2 cup

Wash cranberry. Add all the ingredients together in a medium sauce pan on high heat and bring to boil
After it reaches a rolling boil, reduce heat to medium low and simmer it for 10 minutes or until cranberries burst and juice is thicker
Remove from heat. Cool completely at the room temperature before chill in refrigerator. As it cools, cranberry sauce will thicken.
